Being home more now I find myself cooking alot more than I use to, but I am getting tired of cooking the same things over and over. So I've started trying new things and some are great and some are not so great. The good recipies I find I would like to share and please feel free to send me any recipies you think are worth sharing. (you can copy and paste the recipe into Word and print it out)

Breaded Chicken with Mushrooms
*4 - 6 skinless, boneless chicken breast *1 egg *salt and pepper to taste *2 tsp. garlic salt, divided *1 c. bread crumbs *1/2 c. grated parmesan cheese *1lb sliced mushrooms or 1 -2 cans drained 1/4 c. melted butter 1 Tbs. lemon juice (fresh is nice) small handfull of chopped fresh parsley or 1 -2 tsp. dry
*Preheat oven to 375 degrees *In a shallow bowl, beat the egg with salt, pepper and 1 tsp. garlic salt. In a separate dish, mix bread crumbs with 1 tsp. garlic salt and parmesan cheese. Set aside. *Mix the melted butter and lemon juice. Pour about 2/3 of it in the bottom of a 9x13 baking dish. Tilt to coat bottom. Spread mushrooms in an even layer in bottom of dish. Dip each chicken breast into egg mixture, then into bread crumbs. place on top of mushrooms. Drizzle with remaining butter over the chicken, and sprinkle with parsley. *Bake uncovered for 45 - 50 minutes, until chicken is golden brown and juices run clear.
About our family- 3 children Alyxa 14, Callie 12, and Bella 2 months as of April 7, 2008. Anthony (dad) is a member of the Arizona national guard, Nikki (mom) stay at home mom with bella.
Alyxa is in 8th grade this year and is going into high school next year, but she is smaller than callie which is in 6th grade this year! Crazy! Callie is going to 7th grade next year to chaparral elemetary and middle school. (Callie filled out my profile for me...she did a pretty good job:)
These were taken when Anthonys sister Holli came down with her new baby boy Lynk, who now can say a few words, walk, run, and has 3 teeth. They are the cutest Cousins ever.

I got the video to work. Enjoy. I hope it sounded good. It was awesome in person. Alyxa was picked out of 1000 of kids that tried out for that all state band 129 other kids made it too! (this was when she was in 8th grade, she is now a freshman and is doing marching band!)
